An amazing gluten free pizza that’s simple and really light. You can always sub in your favourite rice if wholegrain isn’t your thing.
Ingredients:
2 large eggs, lightly beaten
1 egg white
¼ tsp. dried oregano
¼ tsp. ground black pepper
⅛ tsp. ground nutmeg
2 cups Uncle Ben’s ready to heat Brown Rice
3 tbsp. parmesan cheese
Toppings of choice - tomato sauce, basil, parma ham and mozzarella.
Method
Preheat the oven to 200°C.
Cover a flat baking tray with parchment paper or spray baking sheet with non-stick spray.
Place the ready to heat rice onto a work surface and roll it out with a rolling pin. This squashes it slightly and allows it to combine with the other ingredients much better.
In a medium bowl, combine the eggs, egg white, oregano, pepper, nutmeg, rice and parmesan cheese.
Spoon the mixture onto your prepared baking sheet.
Using your hands, press it into a 12” inch circle.
Bake for 10-15 minutes, until the crust is stiff and golden.
Remove from the oven and pre-heat your grill to high.
Add desired toppings. I like to keep it simple; tomato sauce, basil, parma ham and mozzarella. Grill for 2-3 minutes or more (depending on the toppings you choose) until toppings are heated through and the cheese is melted.
Slice into 4-8 pieces and serve
